髮菜除了是賀年好意頭的食材之外，其實也可作日常料理及湯水之用。髮菜是海藻類植物的一種，含有維生素A、E、B1、B2，以及鈣、鐵、鉀、碘、磷等營養素；蛋白質含量比例居所有海藻類食物之冠，能為素食者提供大量蛋白質，而且含有質量極佳的水溶性纖維，故易於被人體吸收。

處理方法：先以清水略為清洗，然後浸20分鐘，清除雜質，如想髮菜感覺柔軟，可略加少許生油，用手把髮菜鬆開，再清洗2約2-3次，便可備用。如燘餸可在最後15分鐘才加入髮菜。
